The days continue to blend together but meals, desserts, and treats fit into any day and so it’s time for another recipe. This time I am thinking about the old Drake’s “Devil Dogs” that we used to buy at our general store in West Dummerston. They were my favorite when a child but I think these homemade ones are even better.
Whoopie Pies
Cream together ½ cup Crisco and 1 ½ cup sugar. Add 2 eggs. Next blend in ½ cup soured milk (put about 2 teaspoons of cider vinegar in a measuring cup then add milk to desired level and let sit for a while. I usually prepare the sour milk first and then start making the recipe), ½ cup hot water, and 1 teaspoon vanilla.
Stir in 2 ¾ cup unbleached flour, ½ cup cocoa, 1 teaspoon baking powder, 1 teaspoon baking soda, and a little salt. Mix well and drop by tablespoons on a lightly greased cookie sheet and bake for about 10 minutes at 350 degrees. I really don’t grease my cookie sheets because I don’t like the cookies to flatten out. Try it both ways and see what works the best for you.
Cool and then mix up the
Whoopie Pie Filling
½ cup (one stick) butter, 1 cup confectioners sugar, 3 heaping tablespoons marshmallow fluff, and 1 teaspoon vanilla
Beat all together and spread the mixture between two cookies. I like this filling the best of all others I have tried over the years. I sure hope you like it, too. It was a favorite at home and at the diner. Enjoy.
