Hello from “just over the hilltop” in Norwood with today’s recipe for muffins and pie. Both made with pumpkin. Some of you probably prepare your pumpkin from its original state but I buy mine in a can. And so these recipes call for canned pumpkin.

Spicy Pumpkin Muffins

In a medium to large-size bowl stir together 1 ½ cup flour, ½ cup sugar, 2 teaspoons baking powder, a little salt, 1 teaspoon cinnamon, ½ teaspoon ginger, and ¼ teaspoon cloves. If you like them you can stir in ½ cup raisins.

In a separate bowl beat 1 egg and add ½ cup milk, ½ cup canned pumpkin, ¼ cup canola oil and then add and mix well with the dry ingredients without over mixing the batter.

Put in a greased or baking cup lined muffin pan. Sprinkle a topping of 2 ½ teaspoons sugar and ½ teaspoon cinnamon on the muffins and bake in a preheated 375 degree oven for 23-25 minutes or until done. I hope you like them.

Old Fashioned Pumpkin Pie

Beat 1 egg yolk, (setting the egg white aside in a small bowl), in a bowl and add 1 cup canned pumpkin, 1 ½ cup milk, and 1 teaspoon vanilla. Blend in 2/3 cup sugar, a little salt, ½ teaspoon cinnamon, ¼ teaspoon cloves, and 1 tablespoon cornstarch. Now beat the egg white until stiff and fold into the mixture.

Pour into a 9” unbaked crust and sprinkle with nutmeg. Place on a pizza pan for easier entry into and out of the oven. I place foil around the outer edge of the pie crust for the first 12 minutes of baking. I start with a 400 degree oven for those 12 minutes then remove the foil and reduce the temperature to 350 for about 25 minutes returning the oven to 400 for the last 10-12 minutes or until the center doesn’t jiggle when you move the pie plate or a knife stuck into the middle comes out clean.

Remove from the oven to a cooling rack and when cooled enjoy with whipped cream or ice cream. Or both!

This is my favorite time of the year and though pumpkin is not a favorite of mine I always enjoy making these recipes for those in my life that do love pumpkin. Have a special pumpkin season and let me know if you like these two recipes. Sharon
