Hello and welcome to “March Maple Madness.” During the month of March I featured many specials using pure maple syrup at Mom’s Schoolhouse Diner and want to share some of those recipes with you. My guests at Rose of Sharon next week will get to taste the following:
Maple Walnut Muffins
Combine 1 beaten egg, 2/3 cup maple syrup (I use medium syrup which has a little stronger flavor), ½ cup milk, and 1/3 cup melted butter
In a separate bowl stir together 2 cups unbleached flour, 3 teaspoons baking powder, a little salt, and ½ chopped walnuts.
Add the liquid ingredients to the flour mixture and stir completely.
Bake in greased or paper-lined muffin tins at 375 degrees for 20-23 minutes. Then enjoy!
